Starbucks Oat Bars
  1. Preheat oven to 325°F (163°C).

  2. Line an 8"x8" glass baking dish with parchment paper.

  3. Grind down 2 cups (250g) of the oats in a blender or food processor to create a flour.

  4. Melt the butter, sugar, and corn syrup until dissolved.

  5. The mixture will just barely boil.

  6. Remove from heat.

  7. Add vanilla, milk and (optional) cinnamon. Stir to mix well.

  8. Add oat flour and remaining quick oats. Stir well.

  9. Press mixture into baking dish.

  10. Bake at 325° (163°C) for 17-20 minutes.

  11. If you prefer the chocolate covered Starbucks oat bars, then add a sprinkling (to taste) of semi-sweet chocolate chips over the oat bars, then spread with a spatula as they melt.

  12. Once cooled, pull the parchment paper out of the baking dish and cut into squares.
