Flourless Almond Cake
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.

  2. In a mixing bowl, combine sugar, almond flour, baking powder, and salt.

  3. Add eggs, butter, almond paste, and vanilla extract. Mix until well combined.

  4. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  5. Let the cake cool before serving.

  6. For the raspberry sauce, combine frozen raspberries, sugar, and lemon juice in a saucepan. Cook over medium heat until the raspberries break down and the sauce thickens.

  7. Serve the almond cake with fresh berries and raspberry sauce on the side.
