In a mixing bowl, combine the cream cheese, shredded cheddar cheese, chopped shrimp, Cajun seasoning, garlic powder, smoked paprika, and salt. Mix until smooth and well combined.
Spoon the filling generously into each jalapeño half, smoothing the tops with the back of a spoon.
If using, mix the breadcrumbs with melted butter and sprinkle over the stuffed jalapeños for a crispy topping.
Arrange the stuffed jalapeños on the prepared baking sheet. Bake for 15-20 minutes, or until the jalapeños are tender and the filling is bubbly.
Remove from the oven and garnish with chopped parsley or green onions. Serve warm and enjoy!
