Brown the ground beef with the seasonings (chili powder, oregano, salt, paprika, garlic powder, cumin, onion powder, celery salt, cayenne)
Add the tomato paste and stir
Add the chopped onion and cilantro stems, cook for 5 minutes
Place the tortillas on a parchment-lined baking sheet, brush with olive oil on both sides
Add the ground beef to ½ of each tortilla, top with shredded cheese
Fold the tortillas over and top with more cheese
Bake at 400°F for 15 minutes until golden
Top with the avocado lime crema (avocado, lime, sour cream/yogurt, salt, cilantro)
