Frosted Pumpkin Roll
  1. Beat eggs on high for 5 minutes.

  2. Add in white sugar gradually.

  3. To this mixture, add pumpkin and lemon juice. Mix.

  4. Then add flour, baking powder, spices, and salt.

  5. Pour batter into a wax paper lined jelly roll pan.

  6. Sprinkle in 1 cup chopped nuts, if desired, on top.

  7. Bake at 375 F for 15 minutes.

  8. Sprinkle powdered sugar onto a towel and invert the pumpkin cake when done.

  9. Roll the cake and keep it wrapped in towel until cool.

  10. Then unroll and spread with frosting.

  11. To prepare frosting, beat all the ingredients together.

  12. After frosting the cake, roll cake and cover with aluminum foil or plastic wrap.

  13. Refrigerate until set.

  14. Cake may also be frozen.
