Blueberry Squares
  1. In a bowl

  2. Combine all the wet ingredients – eggs

  3. And the flavourings (in this case

  4. The grated lemon zest). Mix until you have a smooth

  5. Even batter.

  6. Add the dry ingredients – flour and baking powder – and mix well. The batter will be quite thick; add the lemon juice and fold it in until combined.

  7. Gently fold the blueberries into the batter

  8. Then transfer the mixture to a lined baking dish. Decorate with a few extra blueberries

  9. If you like.

  10. Bake at 180°C for about 40 minutes. Before removing from the oven

  11. Check with a skewer – if it comes out clean

  12. The cake is ready.
