Reserve some of the pasta cooking water before draining the pasta.
In a large bowl, toss the hot pasta with the grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper.
Add a splash of the reserved pasta cooking water and continue tossing the pasta until the cheese melts and a creamy sauce forms.
Serve immediately, adding more pasta cooking water as needed to achieve the desired consistency.
