Peanut Butter Chocolate Chip Cookies
  1. Preheat the oven to 350°F or 180°C.

  2. Drain the chickpeas and rinse them under cold water.

  3. Add the chickpeas, peanut butter, coconut sugar, vanilla, baking powder, and sea salt to a food processor fitted with the S blade. Process until all of the ingredients combine to form the dough.

  4. Stir in the chocolate chips.

  5. Shape the dough into cookies by rolling a 1-inch ball with your hands and then pressing it flat (the cookies won't spread on their own in the oven, you need to shape them).

  6. Place them on a lined baking tray and bake for about 12-14 minutes.

  7. Enjoy!
