High Protein Esquite Inspired Beef Bowl
  1. Cube sweet potatoes and drizzle with olive oil

  2. Season sweet potatoes with onion powder, garlic powder, chili flakes, dried parsley, and salt

  3. Toss sweet potatoes and bake at 400 degrees for about 25 minutes, flipping halfway through

  4. Brown ground beef in a hot skillet and season with steak seasoning

  5. Add diced onions to the beef when it is about 80% cooked and let everything finish cooking

  6. Dice serrano pepper and chop cilantro including stems

  7. Blend cottage cheese and lime juice until smooth to create the sauce

  8. Mix corn, serrano pepper, cilantro, cottage cheese sauce, and Tajin together

  9. Add cotija or Parmesan cheese to the mixture

  10. Fold in diced avocado

  11. Assemble the bowl with roasted sweet potatoes, seasoned beef, and esquite mixture

  12. Serve and enjoy
