In a bowl, combine the farmer’s cheese, egg, semolina, sugar, and vanilla sugar. Mix until smooth.
Let the mixture rest for 10–15 minutes so the semolina can absorb some moisture.
Take a small portion of the mixture and flatten it in your hand. Place one square of chocolate in the center, then cover it with another small portion of the cheese mixture and shape into a thick pancake.
Coat each syrnyk lightly in flour.
Heat a pan over medium heat with a little oil or butter. Fry the syrnyky for 3–4 minutes on each side until golden brown and cooked through.
Serve warm while the chocolate inside is still melted.
