Slice up your tomatoes and put them in a sieve over a bowl and season with plenty of salt to draw out the moisture for at least 30 minutes
Cut up your bread into bite size chunks, spread out on a baking tray and drizzle with plenty of olive oil and season with lots of sea salt then bang it in the oven for 15 mins at 180C or until golden. You can add herbs and garlic if you like, I didn't though because Jason's creations bread is already Olive and Basil flavoured
Slice up your halloumi and get it in a pan with olive oil over a medium-low heat, until golden on both sides. Then turn the heat off and drizzle with honey and leave to coat in the warm pan
Take your sieve of tomatoes off the top of the bowl and you should be left with tomato juice in the bowl. Add your vinegar, sliced shallot, grated garlic, olive oil, mustard and pepper to the bowl and mix it altogether until emulsified. Then add your basil leaves and mix through
Chuck your tomatoes in the bowl with the dressing, along with your croutons and mix
Serve up on a plate, add your halloumi and extra croutons and basil over the top
