  1. Combine almond butter, cream cheese, coconut oil, monk fruit sweetener and vanilla, mixing to make a dough.

  2. Pour pine nuts into a bowl.

  3. Portion dough into 9 equal balls, about 2 Tbsp each, and drop into the bowl with the nuts.

  4. Roll balls around in the nuts until each one is covered with pine nuts.
