Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides and set aside.
Create the Sauce: In a bowl, whisk together the chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes (if using).
Assemble the Crockpot: Place the seasoned chicken breasts in the bottom of the crockpot. Pour the sauce mixture over the chicken, making sure the breasts are fully coated.
Add Sun-Dried Tomatoes: Sprinkle the chopped sun-dried tomatoes over the top of the chicken and sauce.
Cook: Set the crockpot to low and cook for 4 hours, or high for 2 hours, until the chicken is fully cooked and tender.
Finish with Butter: In the last 30 minutes of cooking, add the butter to the crockpot, stirring it into the sauce as it melts.
Serve: Garnish with freshly chopped basil or parsley if desired, and serve the chicken with a generous spoonful of sauce.
