Wash your potatoes and add them to a pot of boiling water with 1 tbsp of salt. Boil for approximately 25min until fork tender.
Drain the potatoes and transfer them to a bowl. Drizzle some olive oil on your potatoes and season with your herbs of choice (optional).
Grate your halloumi in a bowl and then prepare a baking sheet with some parchment paper. Add your halloumi in small circles and then place a potato on top. Use the back of a heavy measuring cup or ramekin to smash each potato.
Bake the potatoes in a preheated oven at 180C for approximately 15-20min until the halloumi crisps up and becomes golden brown on the edges. Keep a close eye to make sure the cheese doesn’t burn!
Remove from the oven and serve warm.
