Roast Potatoes

Heat oven - Temperature 200°C

  1. Peel and wash the potatoes keeping them nice and chunky

  2. Add to a pan and bring to the boil, simmering for 7-8 minutes.

  3. Strain off the potatoes and let them cool with the lid off

  4. Once potatoes have dried off, fluff in the pan until they have a ruffled texture.

  5. Add duck fat to a tray with a good amount of oil to prevent burning, and put it in the oven(10 mins).

  6. CAUTION - carefully remove the roasting pan from teh oven, and place on work top.

  7. Carefully place the potatoes in to the oil. Ladle the hot oil onto the potatoes carefully to avoid damaging the ruffled surface

  8. Season the potatoes liberally with salt and pepper

  9. Add the garlic and rosemary

  10. Place in the oven for approximately 15 - 20 minutes on high heat until golden and crispy

  11. Finish with fresh herbs (rosemary, garlic)

  12. Strain on paper towels, season again, and serve
