Ingredients:
1 lb Italian sausage (choose mild or spicy to suit your taste)
1 cup orzo pasta
4 cups chicken broth
2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 tsp Italian seasoning
2 cups fresh spinach, roughly chopped
½ cup Parmesan cheese, grated
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
Add the minced garlic and Italian sausage. Cook, breaking the sausage into bite-sized pieces, until browned and fully cooked, approximately 5-7 minutes.
Stir in the orzo pasta and Italian seasoning, ensuring the orzo is well coated in the flavors.
Pour in the chicken broth and bring to a gentle boil. Reduce the heat to a simmer and let cook, stirring occasionally, for 10-12 minutes or until the orzo is tender and most of the liquid has been absorbed.
Mix in the chopped spinach and cook for 1-2 minutes, just until wilted. Season the dish with salt and pepper to taste.
Remove the skillet from heat and stir in the Parmesan cheese until melted and creamy.
Serve immediately, garnished with fresh parsley.
