Blend onions to a paste
Add onion paste to mince
Add olive oil, yogurt, paprika, pepper, chilli flakes, cumin, oregano, salt
Mix until smooth and fully incorporated
Spread meat mixture very thinly on parchment (few mm thick)
Roll tightly in parchment
Repeat with remaining meat
Place rolls on baking tray
Bake at 200C (390F) for 20 minutes
Remove tray and drain excess liquid
Bake another 15 minutes or until parchment turns dark brown
Unroll parchment carefully
Squeeze lemon juice on meat
(Optional) Bake unrolled meat 5–10 minutes to crisp edges
Slice thin and serve with salad and pita
