Nefi’s Kebab (Homemade Döner)
  1. Blend onions to a paste

  2. Add onion paste to mince

  3. Add olive oil, yogurt, paprika, pepper, chilli flakes, cumin, oregano, salt

  4. Mix until smooth and fully incorporated

  5. Spread meat mixture very thinly on parchment (few mm thick)

  6. Roll tightly in parchment

  7. Repeat with remaining meat

  8. Place rolls on baking tray

  9. Bake at 200C (390F) for 20 minutes

  10. Remove tray and drain excess liquid

  11. Bake another 15 minutes or until parchment turns dark brown

  12. Unroll parchment carefully

  13. Squeeze lemon juice on meat

  14. (Optional) Bake unrolled meat 5–10 minutes to crisp edges

  15. Slice thin and serve with salad and pita
