Radish Piccata
  1. Roast the radishes in a pan, searing them hard on one side and then seasoning them.

  2. Make the piccata sauce by sautéing garlic and anchovies, then adding chicken stock and letting it reduce.

  3. Finish the sauce by adding lemon juice, capers, and cold butter to emulsify it.

  4. Toss the roasted radishes in the sauce to coat them.

  5. Turn off the heat and stir in a bunch of parsley.
