Wrap a block of silken-firm tofu between kitchen towels and press down gently to release the extra water.
Slice the tofu/ paneer into bite sized pieces and lightly coat it in corn flour for that extra crisp coating.
Whisk together the sauce with the listed ingredients.
Gently heat 2 tbsp of oil in a small pan. Pan-fry tofu until golden brown on both sides (flipping half way).
Once lightly crisp and golden, set the pieces aside; and in the same pan: heat 2-3 cloves of minced garlic + 2-3 tsp chilli flakes + handful of sesame seeds and scallions.
Stir for a few minutes until fragrant, then pour in the sauce. Once thickened and simmering, add back the tofu and give it a good mix. Let the tofu braise in the sauce for 5-6 minutes until the sauce has reduced and coated the pieces completely.
Garnish as you'd like; serve with rice and enjoy.
