Creamy Sausage Tortellini Soup

1lb Italian Sausage

1 Tbsp Butter

1 Tbsp Italian Seasoning

1 tsp Paprika

½ tsp Red Pepper Flakes (optional)

1 Large Sweet Potato, cubed

1 Tbsp Minced Garlic

1 Tbsp Tomato Paste

1 Can 8oz Tomato Sauce

3 Cups Water

3 Cups Chicken Broth

8oz Tortellini

3 Cups Chopped Spinach

1 Cup Heavy Cream

Over medium heat, heat butter and garlic in a large pot.
Add sausage and cook until crumbled and no longer pink.
Drain grease and sprinkle with Italian seasoning & paprika.
Add tomato paste & red pepper flakes
Cook for a few minutes while mixing
Add cubed sweet potatoes. Mix well.
Pour in water and chicken broth.
Bring to a boil then reduce to a simmer, cover, and cook for 15minutes until potatoes are cooked through.
Add in tortellini and cook for ~5minutes.
Add in spinach and stir until it willts.
Remove from heat and add heavy cream. Stir well.
Season with salt and pepper to taste.
