In a bowl mix day old rice with eggs and salt. Mix very well until combined.
Heat neutral oil and sesame oil in a large pan or wok. Add the garlic and cook until fragrant.
Add the egg and rice mixture and stir constantly on high heat for about 2 mins.
Pour the soy sauce around the rim of the pan and keep stirring until combined and the rice turns a light golden brown. Add scallions.
Remove off heat and garnish with more scallions. Serve and Devour!
