Pita Pocket Bread
  1. Mix all ingredients together

  2. Knead the dough for at least 5 minutes until a smooth, pliable dough is formed

  3. Place dough in a lightly oiled bowl and cover with a damp towel

  4. Let rise for 1 ½ hours until doubled in size

  5. Preheat oven and upside down baking sheet to 500°F

  6. Place dough on a lightly floured surface and gently press down to remove air bubbles

  7. Divide dough into 8 sections

  8. Gently shape each section into a small disc and cover with a damp towel

  9. Let rest for 15-20 minutes

  10. Roll each disc flat to about ⅛ inch thick

  11. Place two flattened discs on the upside down baking sheet and bake for 4 minutes

  12. Remove with tongs and place on a clean kitchen towel to cool

  13. Allow oven to warm back up between batches

  14. Continue with remaining dough

  15. Store at room temperature in a container or large Ziploc bag for a few days
