Juicy Baked Salmon
  1. Place the orange and lemon slices on the bottom of a baking dish.

  2. Place the chopped fennel on the baking dish with half the seasonings (1 teaspoon each of salt, pepper, garlic powder, and thyme), mix and add the olive oil.

  3. Top with the salmon fillets and season both sides with the remaining seasonings.

  4. Spread 1 teaspoon of Dijon mustard on top of each piece of salmon.

  5. Bake at 320°F for 30 minutes.

  6. Spoon some of the flavored citrusy oil on top.
