Ciabatta Loaf
  1. Whisk lukewarm water together with the yeast, add olive oil and whisk again.

  2. Add flour and salt and stir really well till the flour is combined.

  3. Scrape down the sides of the bowl and the dough and fold it up into a ball.

  4. Cover and rest for 20min.

  5. After 20 min do 4 stretch and folds wetting your hand between each fold.

  6. Cover and rest for another 20 min.

  7. After 20 min Repeat the process with 4 stretch and folds cover and rest for 1 to 1.5 hours till it gets big and bubbly.

  8. Grease a baking dish and add parchment paper. Heavily flour it and the top of your dough and pour it out.

  9. With floured hands slightly stretch the dough out and fold over one side then the other side over that one then fold up the 2 ends pinch them together and turn the dough over.

  10. Use the palm of your hands trying not to dig into it with your fingers.

  11. Cover and rest for 40 min.

  12. After 10 min add a small dish with water to the bottom of the oven and preheat to 220C.

  13. After the 40 min put your bread in and bake for 10 min, take out the water, turn the oven down to 200C and bake for another 23-25 minutes.

  14. Place on a cooking rack to cool down.
