Using a sieve, sift together the flour, baking powder and bicarbonate of soda into a bowl, with a pinch of salt. Then stir in the sugar.
Melt the butter in a pan. Whisk together the eggs, buttermilk and melted butter in a small bowl. Then gradually whisk the flour to make a smooth, fairly thick batter. If it's too thick, add a drop of milk.
Leave it to stand and cool for 5 minutes.
Now brace yourself.
Heat a large non-stick frying pan over a medium heat. When really hot, brush the surface with a lil' bit of butter.
Pour about 2 tablespoons of your pancake mixture into the pan, so it forms a 10-cm/4-inch circle.
Cook for around 2-3 minutes. Little holes will start to pop open on the upper surface, like a moonscape.
Flip it over and cook the other side until golden and set. Remove the pancake and place on a warmed plate.
Keep going with further pancakes until you've used up all the batter. Layer them between sheets of kitchen roll so they don't stick together.
Serve with the fried bacon rashers and a drizzle of maple syrup. Disgusting. Alternatively, adorn with a selection of fruits, or Spam.
