Preheat oven to 350°F.
In a small saucepan, scald milk (to temp of 180°F) and then pour over butter, sugar and salt.
Once cooled slightly, add the eggs.
In kitchenaid mixer, mix together yeast, Sugar, and lukewarm water. Let rest for 10 minutes.
After 10 minutes, add saucepan mixture and 6-7 cups of flour to yeast mixture until the dough comes away from the sides, but is still a little sticky to the touch. Do not over add flour. You can add more when you are rolling ot out or kneading into balls.
Shape croissant rolls. Roll dough into a large rectangle. Top with butter and sugar and cut into 16 triangles (long and narrow) and roll them up.
Bake at 350°F for 12 minutes. Rotate pans at 6 minutes for a more even bake.
Top with butter after removing from oven.
