Preheat the oven to 400F. Remove the core and finely slice the apples.
Line a baking sheet with parchment paper. Drizzle with about 1 teaspoon of honey, top with 6 to 8 apple slices, slightly overlapping. Drizzle with one more teaspoon of honey. Cover with a rectangular piece of puff pastry (slightly bigger than the apple) and press down the edges to seal. Repeat with the other 7 pastries, spacing them out on the baking sheet.
Beat the egg with one tablespoon of water. Brush the pastries with the egg wash. And bake at 400F for 15 to 20 minutes or until golden and puffy.
Let the pastries cool down for 3 or 4 minutes and gently flip them with a spatula. If the edges are not gold enough, you can place them back in the oven for 2 or 3 minutes.
Sprinkle with powdered sugar and enjoy
