How To Make A Tempura Batter
  1. Add the flour, salt and sugar to a mixing bowl.

  2. Gradually whisk in the chilled sparkling water – do not over-whisk as this will cause gluten to develop in the flour which will form a heavy batter.

  3. Before dipping the batter coat your chosen ingredient in flour to help the batter stick.

  4. Next dip in the batter and let any excess drip off.

  5. Quickly transfer to the hot oil and fry until golden brown and crispy.

  6. Drain on kitchen paper, season and serve immediately.
