Saute onion till softened, add in carrot and celery. Allow to soften. Toss in garlic and cook til fragrant.
Throw in your potato. Incorporate. Pour over your broth. Add seasonings and bay leaves. Bring to a simmer, and let it go for 20 minutes (or until the potatoes are done, check every 10)
In the meantime shred your chicken and chop some kale. Once the simmer is done throw in the chicken and allow it to warm up. Squeeze in lemon juice to taste
Toss in kale and herbs as desired.
Serve with freshly baked bread and butter
