Cajun Chicken Pasta
  1. Cook pasta in salt water. Cook pasta, according to box instructions.

  2. Sliced garlic into thin slices, dice onion.

  3. Cut chicken into pieces and seasoned well.

  4. In a tablespoon of olive oil, cook your chicken on medium heat until cook through about three minutes. Do not overcook the chicken it will cook longer in the sauce. Remove the chicken.

  5. In the same pan , turn down heat add a tablespoon of olive oil and sauté garlic , onion, cherry tomatoes and cook about a minute. Add in tomato paste and stir .

  6. You don't want to burn the tomato paste so slowly incorporate the broth, stirring to get all the flavor from the bottom of the pan.

  7. Add in heavy whipping cream.

  8. Let the sauce thicken. About 2 minutes.

  9. Add in the cooked pasta, seasonings, Parmesan cheese and mix.

  10. Add in the cooked chicken. Stir

  11. Top with Parmesan cheese and parsley. Add chili flakes if you like a spicy kick.

  12. If your sauce is not getting thick, you can add a teaspoon of cornstarch.
