Sticky Smoky Cauliflower With Quinoa & Pea Salad And Green Goddess Dressing
  1. Mix all the marinade ingredients into a bowl until well combined.

    1 tbsp honey or maple syrup

    2 tbsp olive oil

    1 tsp sweet smoked paprika

    1 tsp garlic granules

    2 tsp chilli flakes

    salt & pepper

    Brush the marinade onto the cauliflower slices.

  2. Place them on a baking tray and roast in the oven at 400 degrees Fahrenheit for 30-35 minutes until charred around the edges.

  3. Make the dressing by blending all the ingredients until smooth and creamy.

    ½ avocado

    a handful of coriander

    a handful of basil

    the green part of 2 spring onions

    the juice of ½ lemon

    3 tbsp extra virgin olive oil

    Salt & pepper to taste

    a dash of water to blend

  4. Add all the salad ingredients to a bowl and mix well.

  5. To assemble add the salad to a bowl and place the roasted cauliflower on top. Drizzle with the dressing and enjoy!
