Preheat your oven to 400°F and line a baking sheet with parchment paper.
Slice your puff pastry into rectangles just big enough to wrap around each hot dog.
Layer it up: On the baking sheet, lay down your cheese first, then the hot dog right on top.
Wrap with pastry: Drape your puff pastry rectangle over the top, using a fork to press down ridge around the hotdog
Brush with egg wash to get that golden, glossy finish.
Bake for 20-25 minutes or until puffed and deeply golden brown.
Flip and serve hot with your favorite dipping sauces (I’m partial to mustard and ketchup).
