Nam Yum (basic Thai Salad Dressing)
  1. Pound sugar with a mortar and pestle until finely ground.

  2. Add chiles, and pound until crushed into large pieces.

  3. Add garlic cloves, and pound until lightly crushed but still intact.

  4. Transfer to a small bowl.

  5. Add fish sauce and lime juice; stir until sugar is dissolved.

  6. Let stand until flavors meld, about 5 minutes.

  7. Season to taste with additional fish sauce and lime juice.
