Preheat the oven to 425 degrees F with a large baking sheet inside.
Cut the chicken breasts horizontally to make cutlets and pound them to about ¼ inches thick.
Season the cutlets with salt and pepper.
In a shallow bowl, mix panko, Parmesan, parsley, salt, and pepper. Add olive oil and blend well.
Spread about 1 tablespoon of mayonnaise on each cutlet and dredge in the panko mixture.
Transfer the parchment paper with chicken onto the hot baking sheet.
Bake for 20 to 25 minutes, turning halfway through.
