Lemon Meringue Pie
  1. Crush marie biscuits. Melt butter. Mix the two together and press into a pie dish. Put the dish in the fridge until needed.

  2. Separate eggs.

  3. Beat yolks, lemon rind, lemon juice and condensed milk together until thick and creamy.

  4. Pour into the pie dish and set aside until needed.

  5. Beat the egg whites adding the vinegar, cornflour and the castor sugar slowly until still peaks have formed.

  6. Top the pie dish with the meringue mixture and bake in the oven at 180C for 10 minutes.

  7. Leave to cool and refrigerate until slightly chilled before eating.
