Horse Gelatin Trick
  1. Sprinkle 1 tablespoon of unflavored gelatin powder over 2 tablespoons of cold water in a small glass or bowl. Do not stir. Let sit undisturbed for 5 minutes until spongy and swollen.

  2. Heat ½ cup of water to 160-180°F (hot but not boiling). Pour directly over the bloomed gelatin. Stir continuously with a small whisk or fork for 60-90 seconds until the mixture turns completely clear with no lumps.

  3. Stir in 1 tablespoon of fresh lemon juice and 1 teaspoon of apple cider vinegar if using. Mix well and taste.

  4. For a warm drink, consume immediately 20-30 minutes before your largest meal. For gelatin cubes, double the gelatin to 2 tablespoons, pour into silicone ice cube molds, and refrigerate for 2 hours until firm.

  5. Drink the warm version or eat 2-3 firm cubes about 20-30 minutes before your meal. For best results, use once daily before your biggest meal and build up to three daily servings over the first week.
