Gnocchi Al Ragù
  1. Prepare the gnocchi dough by boiling potatoes until tender

  2. Mash the cooked potatoes and combine with flour, egg, and salt

  3. Shape the dough into gnocchi pieces

  4. Prepare the Bolognese sauce by sautéing diced onion, carrot, and celery

  5. Add pancetta if using and cook until rendered

  6. Brown the ground beef in the mixture

  7. Deglaze with dry red wine

  8. Add tomato paste and stir to combine

  9. Add tomato passata or crushed tomatoes

  10. Add bay leaf and Parmigiano rind

  11. Simmer the sauce until thickened, seasoning with salt and black pepper

  12. Remove the Parmigiano rind from the sauce

  13. Cook the gnocchi in boiling salted water until they float

  14. Toss the cooked gnocchi with the Bolognese sauce

  15. Finish with grated Parmigiano-Reggiano
