Dulce De Leche French Toast
  1. In a pot, add all the ingredients for the custard, except the butter. Give this a whisk, then place this onto medium heat.

  2. Keep heating this, whiles constantly whisking, until the custard thickens.

  3. Take this off the heat and add the butter, whisk until all the butter has melted.

  4. Push this through a sieve, then cover and leave in your fridge to cool down for 20 minutes.

  5. Get a slice of bread and spread some dulce de leche over it. Place another slice of bread onto it, spread some custard on top. Now add another layer of bread, more dulce de leche, then a final layer of bread. At this point, cut the crusts off.

  6. Repeat this with the remaining 4 slices of bread. Then leave your 2 french toasts aside.

  7. Place a pot of oil onto medium heat, and heat until it reaches around 180c.

  8. Add your 3 eggs into a shallow bowl or plate. Whisk these.

  9. Get one of your french toasts and dip this on all sides, into the egg. You don't need to soak it in the egg, just do a quick dip on each side.

  10. Place this into the oil and repeat with the other french toast.

  11. Fry until all sides are golden brown and crispy.

  12. In a pan, add the 100g of butter and let this melt.

  13. Once the french toasts have fried, add these into the pan and let them cook in the butter for a few minutes. Make sure each side is coated in the butter.

  14. Add the french toasts onto plates, add a piece of butter onto them, then pour some maple syrup over them. At this point, you can sprinkle some flaky salt on top too.

  15. Now you can dig in, enjoy!
