Marinate the chicken in olive oil, lemon zest, garlic, rosemary, thyme, salt and pepper for at least 1 hour or up to overnight.
Roast the chicken in the oven until cooked through.
While the chicken is cooking, prepare the warm olives and citrus salsa by combining olives, orange, lemon and parsley.
Serve the roasted chicken with the warm olives and citrus salsa, along with arugula, roast potatoes or vegetables.
