  5. In a pot, cook the potatoes and beans in salted boiling water.

  7. Add the diced onions along with a pinch of salt and some pepperoncino, cooking for about a minute.

  8. Incorporate the chopped celery and cook until it becomes tender.

  9. Stir in the tin tomatoes, opting for a quality brand like Mutti Polpa or plum tomatoes.

  10. Once the sauce has simmered, add the cooked potatoes and beans, along with a handful of fresh basil and a piece of parmigiano rind.
