Begin by taking the maligned corn flour or masarina and gradually add warm water at around 60°C while kneading the mixture.
Continue to add the water slowly and keep kneading until the dough is well combined.
Form the dough into a ball and press it between your hands; if it cracks at the edges, it needs more water.
Cover the dough with a damp towel and let it rest for a while.
Once rested, press the dough evenly to form tortillas.
Preheat a non-stick pan or griddle over medium-high heat.
Cook the tortillas in three stages: first, cook briefly on one side; second, flip to cook through; and third, finish cooking.
After cooking, place the tortillas in a container to steam and soften slightly.
Finally, add some taquito the sal and enjoy your tortillas.
