Bean Soup
  1. Soak the beans. Rinse beans, soak overnight (10–12 h).

  2. Cook the beans. Drain, add fresh water, boil until almost tender (40–50 min).

  3. Prepare vegetables. Dice onion, carrot, bell pepper. Peel and cube potatoes.

  4. Make the sauté. In pan with oil, sauté onion and carrot until golden.

  5. Combine ingredients. Add potatoes, sautéed vegetables, bay leaf, smoked meat (if using) to pot with beans. Simmer 30 min.
