  1. Soak the rice at least 30 mins before cooking, longer is better!!

  2. cook chicken in saucepan until 80% done. Remove

  3. Use rendered chicken fat to cook out ginger and spring onion and salt

  4. Add soaked rice and water, stir

  5. Use about ½ the usual amount of water.

  6. Sprinkle top of rice with asian mushrooms (if using) then Place chicken on top of rice

  7. Cover and cook on very low heat about 10mins until rice cooked and crispy bottom on rice

  8. Finish with fresh chopped cilantro, green onions, red chilies, and chili sauce.
