To make the dough, combine water, sugar and yeast in a bowl and let yeast bloom for 3 minutes. Add olive oil , flour and salt and mix until shaggy dough forms. Knead for 10 minutes. It will be sticky at times but just keep kneading and it will become easier trust me.
Place in a greased bowl and let rise for 1-2 hours covered with plastic.
Cut the dough into two and shape into tight balls by rolling on worksurface. Place in a container and cover each dough ball. Let rise for another hour.
Place baking stone or steel on the middle rack in the oven for best results and preheat to 500F. If you don’t have these make the pizza on a tray and use a lower rack in the oven.
To make the sauce combine the ingredients.
Take your dough ball and dunk all sides in semolina flour. This will help it not stick. Stretch out your dough until really thin. Use a rolling pin if you are having too much trouble. Top with sauce and grated cheese. Then a drizzle of olive oil.
Once your oven has heated up for at least 30 minutes. Cook the pizza for 6-10 minutes. This is highly dependent on your oven so keep an eye on it.
Remove once cooked to your liking. Top with grated parm and basil. ENJOY.
