Wash potatoes and cut into halves or thirds. Boil until fork-tender (or bake until soft). Generously grease a springform pan with oil or butter.
Place cooked potatoes into the pan. Lightly oil the bottom of a glass and press the potatoes into an even layer along the bottom and sides to form a crust. Spray with more oil, season with salt, and bake at 425°F (220°C) for 20–25 minutes until golden and crispy.
Reduce oven temperature to 350°F (175°C). In a bowl, whisk together eggs, ricotta, Colby Jack cheese, scallions, and chopped bacon.
Pour the filling into the warm potato crust and top with an extra sprinkle of cheese. Bake for 40–45 minutes, or until the center is set and no longer jiggly.
Let cool for a few minutes before removing the springform ring. Garnish with flaky salt, extra bacon, scallions, fresh chives, or a drizzle of hot honey.
