Cut chicken into bite-size pieces.
Season chicken with salt and pepper.
Add 1 ½ tablespoons of cornstarch to the chicken and mix well.
Heat 2-3 tablespoons of high smoke point oil in a pan over medium heat.
Add chicken to the hot oil and fry for 3 minutes on each side.
While chicken is cooking, combine 2 tablespoons of hot honey, 1 tablespoon of rice vinegar, 2 tablespoons of soy sauce, 1 tablespoon of hoisin sauce, 2 cloves of minced garlic, and ½ teaspoon of grated fresh ginger in a bowl. Mix well.
Remove cooked chicken from the pan and set aside.
Reduce heat to medium-low in the same pan.
Add the prepared sauce to the pan and bring to a gentle simmer.
Add 1 teaspoon of cornstarch to the sauce and mix in well.
Return the chicken to the pan and coat with the thickened sauce.
Add green onion (optional) and mix.
Plate the chicken over white rice or desired side.
Garnish with sesame seeds and green onions (optional).
