Copycat Chipotle Cilantro Lime Rice
  1. Gather the ingredients.

  2. In a 3-quart saucepan, combine water, rice, oil, and salt. Bring to a boil.

  3. Reduce heat, cover, and let simmer for 15 to 20 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes covered.

  4. Stir in fresh cilantro, lime zest and juice.
