Preheat oven to 400 degrees F
Place cast iron pan in the oven for 5 minutes to heat up
Mix eggs, flour, milk, maple syrup, and vanilla extract together in a bowl until combined
Add butter to the hot cast iron pan and let it melt in the oven for another 2 minutes
Carefully remove the hot cast iron pan from the oven and pour the batter into it
Bake in the oven for 20 minutes until fluffy and golden brown
Top with powdered sugar, fresh fruit, and maple syrup before serving
