Preheat oven to 325 F and line a regular muffin pan with liners
Combine crust ingredients and evenly portion out the crust between all 12 liners, pressing down firmly
Bake crust for 5 minutes then remove and let it cool
With a stand mixer, combine cream cheese and sour cream until smooth, scraping down as needed
Add the sugar and vanilla then mix to combine
Mix the eggs in one at a time and make sure to not over mix
Portion out the filling between the 12 liners and bake for 16-20 minutes until the tops have set
Remove from the oven and let cool on the counter, then transfer to the fridge to cool for another 1-4 hours
Once the cheesecakes are cooled, decorate with strawberries and whipped cream as Santa hats
