Add 1 lb ground beef to a bowl and season with salt, pepper, 1 tbsp onion powder, 1 tbsp oregano, 1 tbsp paprika, and ½ tsp cayenne pepper
Process together 1 small yellow onion, 2 garlic cloves, 3 tbsp walnuts, and a handful of fresh parsley until well combined, then add to the meat mixture and mix thoroughly. Let sit for 1 hour if possible
Divide the mixture into 5 equal sized balls, roll onto low carb tortillas, and smash down to cover the entire surface
Roll up the tortillas and cut into pinwheels using a sharp knife. Skewer the pinwheels with wooden or regular skewers
Place on a parchment-lined sheet pan and add cherry tomatoes and red onion wedges. Drizzle vegetables with olive oil, salt, and chili flakes
Bake at 400°F for 25-27 minutes. Spoon any liquid over the top or reserve
Mix 1 cup Greek yogurt with 3 tbsp chopped parsley, 2 tbsp chopped mint, salt, pepper, 1 tbsp olive oil, and fresh lemon juice to make the yogurt sauce
Serve kebabs over the yogurt sauce and garnish with fresh parsley, sumac, or Aleppo pepper
